Many of us who train for a better body composition go to great lengths nutritionally to eat for our goals. A lot of the time, this results in eating the same thing, over and over!
This is a recipe for failure!
Over the course of the coming weeks, we’ll be posting a few tasty but nutritious foods, put together by PPT Trainer Mary Elasi. Part 1, we’re looking at 2 vegetables from the cruciferous vegetable family. Nutrient dense, and great for natural detoxification. Enjoy!
Part 1: Broccoli & Cauliflower patty
INGREDIENTS
100g broccoli
100g cauliflower
1 x small zucchini
1 x egg
6 – 10 leaves fresh basil
90g x egg whites (approx whites from 2-3 eggs, alternatively can just use another 2 eggs)
20g grated parmesan cheese
15g psyllium husk
Coconut oil spray (cooking only)
NOTE: I keep baked broccoli and cauliflower in the fridge handy to throw into various meals, this was made with baked broccoli & cauliflower, but these can be substituted for raw as well
METHOD
Place all vegetables and basil into blender and chop till fine
Mix through all other ingredients and let sit for a few minute while Psyllium expands
Heat pan to medium heat and spray with coconut oil
spoon out mixture and cook on both sides
Eat as is or team up with your chosen protein and a side of salad for a larger meal
Above mixture will make approx 10 pattys sized around 10cm in diameter.
They keep well in the fridge, can be frozen and reheated down the track
Easy to pack for lunches on the go
VARIATIONS
Add extra veg, no restrctions
Add other protein sources such as tuna, shredded chicken or turkey, smoked salmon
